Fermentation
Fermentation is a metabolic process. This means that fermentation is derived from the metabolism of an organism. In this case it occurs in yeast and bacteria, and also in oxygen starved muscle cells like in the case of lactic acid fermentation. In this process of fermentation sugar is converted into acids, gases or alcohol. In the recipe of pizza dough yeast rise and creates gas. The gas gets trapped in the the dough and the dough rises creating air bubbles. In the recipe of ginger beer yeast is used to carbonate the ginger beer. The yeast becomes trapped but still produces carbon dioxide. The carbon dioxide also has know where to go and so it settles in the ginger beer.
Recipe
Pizza Dough
Pizza dough uses fermentation to make its bread soft. The carbon dioxide rises and leaves air bubbles that stay in the bread.
1.In a small bowl mix warm water sugar and yeast together.
2.Cover with a tea towel and stand in a warm area for 10 -15 mins to commence fermentation.
3.In a large bowl combine flour and salt. Make a well in the centre
4.Add frothing yeast to flour mixture & 1T olive oil.
5.Mix together thoroughly and knead on clean bench.
6.Place dough in oiled bowl covered for 5 mins in warm place.
7.Knead once again for 2 mins & wrap for freezing until next lesson.
Topping:
1 Tablespoon Tomato sauce
¼ Cup tomato cooking sauce
Pinch of Dried herbs
½ Cup grated cheese
Two additional ingredients of your choice.
Method:
- 3/4cup warm water
- 1tsp yeast.
- ¼ tsp sugar
- 2 cups plain flour
- ½ tsp salt.

Method:
- Pre heat oven 200c
- Roll dough out to fit pizza tray
- Combine sauce, tomato paste and herbs and spread over pizza bas
- Arrange toppings over sauce mixture
- Bake in a hot oven for a 20 minutes.
Ginger Beer
2 x 2 litre bottle
Funnel
1 cup white sugar
¼ tsp yeast.
1 – 11/2 T fresh ginger
Juice of 1 lemon.
Leave in warm spot for 48hrs
Method:

Method:
- Grate ginger and add to bottle
- Add sugar to bottle via funnel along with yeast. Shake well.
- Juice the lemon and add to the bottle.
- Fill the bottle almost to the top with water. Shake.
- Leave in warm spot for 48 hrs. Do not leave any longer before placing in fridge as it may explode.
- For this reason do not use a glass bottle.
